Celiac disease is a disorder caused by failure of the intestine to absorb vital dietary nutrients from foods containing gliadin, a portion of gluten which is alcohol-soluble.
Usually, people with Celiac disease are sensitive to foods containing cereal protein such as wheat and other grains. They are more sensitive to wheat than other cereals such as rye, oats, and barley.
The defect in absorption leads to malnutrition and disease in patients afflicted with the disease.
It is not exactly known how a person can be sensitive to gluten, although it is well established that Celiac disease is a genetic disorder. People whose relatives have Celiac disease are at higher risk of getting the disease. It is also common among people from northwest Europe.
People with Celiac disease should follow a gluten-restricted and gliadin-free diet. They should avoid wheat, rye, barley, and oats. However, they can eat rice and corn because these do not contain gliadin.
There are cases where patients do not respond to dietary restrictions. Therefore, these people are given steroid therapy.
Steroid treatment must be used with caution because it causes side effects such as memory loss, bone loss, weight gain, congestive heart disease, or high blood pressure.
